Kotlety rybne, or Polish fish cutlets, are a traditional and delicious dish often enjoyed as a main course. This flavorful recipe combines fresh fish with breadcrumbs, herbs, and spices to create a crispy golden crust on the outside, while remaining tender and moist on the inside. Ingredients:

500g white fish fillets (such as cod, haddock, or pollock)
1 small onion, finely chopped
1 egg
1/2 cup breadcrumbs (plus extra for coating)
1 tablespoon fresh parsley, chopped
1 tablespoon dill, chopped (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon lemon juice
2 tablespoons butter (for frying)
2 tablespoons vegetable oil (for frying)
Directions:

Prepare the Fish Mixture: Begin by finely chopping the fish fillets or using a food processor to blend them into a paste-like consistency. Transfer the fish to a mixing bowl.
Add the Ingredients: In the same bowl, add the chopped onion, egg, breadcrumbs, parsley, dill (if using), salt, pepper, and paprika. Mix thoroughly until all ingredients are combined into a sticky, thick mixture.
Shape the Cutlets: With your hands, shape the mixture into small oval or round patties, about 1-inch thick. Coat each patty in additional breadcrumbs to give them a crispy exterior.
Fry the Cutlets: In a large frying pan, heat the butter and oil over medium heat. Once hot, carefully add the fish cutlets to the pan. Fry them for 3-4 minutes per side, or until golden brown and cooked through.
Drain: Remove the cutlets from the pan and place them on a paper towel-lined plate to absorb excess oil.
