This hearty recipe is beloved for its versatility, allowing cooks to adapt fillings and seasonings to their taste. These tender rolls, often stuffed with mushrooms, cheese, or vegetables, are a perfect main course for family dinners or special occasions. Follow this guide to recreate this delightful dish in your kitchen.

Ingredients:
For the Meat Rolls:

500 g minced meat (beef, pork, or a mix)
1 medium onion, finely chopped
2 cloves garlic, minced
1 egg
3 tablespoons breadcrumbs
1 teaspoon mustard
Salt and pepper to taste
For the Filling:

100 g mushrooms, finely chopped
50 g grated cheese (optional)
1 tablespoon butter or oil (for sautéing)
For the Sauce:

1 tablespoon butter or oil
1 tablespoon flour
1 cup beef or vegetable broth
½ cup sour cream
1 teaspoon paprika
Directions:
Prepare the Filling:

Heat a skillet over medium heat and add butter or oil.
Sauté the chopped mushrooms until golden and fragrant. Season with salt and pepper. Set aside to cool.
Make the Meat Mixture:

In a large bowl, combine minced meat, chopped onion, garlic, egg, breadcrumbs, mustard, salt, and pepper. Mix well until the mixture holds together.
Assemble the Rolls:

Take a small handful of the meat mixture and flatten it into an oval shape.
Place a spoonful of the mushroom filling (and cheese, if using) in the center. Fold the edges over the filling and shape into a roll, ensuring the filling is sealed inside.
Cook the Zrazy:

Heat a pan with oil over medium heat. Brown the rolls on all sides until golden.
Remove the rolls and set aside.
Prepare the Sauce:

In the same pan, melt butter and whisk in flour to create a roux.
Slowly add broth, stirring continuously to avoid lumps.
Stir in sour cream and paprika, then simmer until thickened. Season to taste.
Combine and Simmer:

Return the meat rolls to the pan with the sauce. Cover and simmer for 15–20 minutes to ensure the meat is fully cooked and infused with the sauce.
Serving and Storage Tips:
Serving: Serve hot with mashed potatoes, rice, or fresh bread. Garnish with chopped parsley for added color and flavor.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of water if needed.
