Ingredients:
200g dark chocolate
150g butter
200g sugar
4 eggs
200g all-purpose flour
1 tsp baking powder
1/2 tsp vanilla extract
100ml milk
100g crushed walnuts or almonds (optional)
A pinch of salt
For the frosting:
200g cream cheese
100g powdered sugar
100g heavy cream
2 tbsp cocoa powder
Directions:
Prepare the cake batter:
Preheat your oven to 180°C (350°F). Grease and line a round cake pan. Melt the dark chocolate and butter in a heatproof bowl over simmering water (or microwave in intervals). Once melted, allow the mixture to cool slightly.
Mix the wet ingredients:
In a large bowl, beat the eggs with sugar until light and fluffy. Add the melted chocolate-butter mixture, vanilla extract, and milk, and mix until well combined.
Combine dry ingredients:
In another bowl, sift together the flour, baking powder, and salt. Gradually add the dry mixture into the wet ingredients, stirring gently until just combined. If using, fold in the crushed nuts.
Bake:
Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Prepare the frosting:
In a medium bowl, combine the cream cheese, powdered sugar, heavy cream, and cocoa powder. Whisk until smooth and creamy. Refrigerate for 15-20 minutes to set the frosting.
Assemble the cake:
Once the cake is cool, slice it into two or three layers (depending on your preference). Spread the cream cheese frosting between the layers and on top of the cake.
Serving and Storage Tips:
Serving:
Serve chilled or at room temperature, paired with a cup of coffee or tea for a delightful treat. This cake can also be garnished with additional crushed nuts or cocoa powder for an elegant touch.
