Ingredients
For the cake base:

3 large eggs
100 g granulated sugar
100 g all-purpose flour
1 tsp baking powder
1 tsp vanilla extract
For the peach layer:

300 g canned peaches (drained and sliced)
100 ml peach syrup (from the canned peaches)
1 tbsp cornstarch
For the cream layer:

250 ml heavy cream
150 g cream cheese
2 tbsp powdered sugar
1 tsp lemon juice
For the topping:

50 g peach jelly or glaze
Fresh peach slices (optional)
Directions

Prepare the Cake Base

Preheat your oven to 180°C (350°F) and line a round cake pan with parchment paper.
In a mixing bowl, whisk the eggs and sugar until fluffy and pale.
Gently fold in the flour, baking powder, and vanilla extract.
Pour the batter into the prepared pan and bake for 20–25 minutes or until a toothpick inserted comes out clean. Let the cake cool completely.
Make the Peach Layer

In a small saucepan, mix the peach syrup with cornstarch until smooth. Heat the mixture over medium heat, stirring constantly, until it thickens. Remove from heat and fold in the peach slices. Let it cool.
Prepare the Cream Layer

Beat the heavy cream with powdered sugar until soft peaks form.
In a separate bowl, whisk the cream cheese and lemon juice until smooth. Gently fold the whipped cream into the cream cheese mixture.
Assemble the Cake

Spread the cooled peach layer evenly over the cake base.
Add the cream layer on top, smoothing it out with a spatula.
Chill the assembled cake in the fridge for at least 2 hours.
Add the Topping

Spread peach jelly or glaze over the top of the cake for a shiny finish. Decorate with fresh peach slices if desired.
Serving and Storage Tips

Serve chilled for the best flavor and texture.
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
Variations

Fruit Alternatives: Swap peaches for mangoes, strawberries, or pineapple for a different fruity twist.
Cake Base: Use a sponge cake or biscuit base if preferred.
Alcohol-Infused Flavor: Add a splash of peach liqueur to the syrup for a more sophisticated taste.
