Ingredients:
2 medium-sized lemons (zest and juice)
200 g (1 cup) granulated sugar
250 g (2 cups) all-purpose flour
3 large eggs
150 g (⅔ cup) unsalted butter, softened
1 tsp baking powder
½ tsp vanilla extract
100 ml (½ cup) milk
A pinch of salt
Powdered sugar (for dusting)
Directions:
Preheat your oven to 180°C (350°F) and grease a loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a separate large mixing bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
Zest the lemons and add the zest to the butter mixture, followed by the lemon juice. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Once cooled, dust with powdered sugar for a finishing touch.
