Ciasto Popapraniec, which translates to “Messed-Up Cake,” is a popular Polish dessert that’s as quirky as its name. This cake is a delightful combination of layers, textures, and flavors that come together in perfect harmony. Ingredients:
For the Cake Layers:
4 large eggs
1 cup (200 g) granulated sugar
½ cup (120 ml) vegetable oil
½ cup (120 ml) milk
2 cups (250 g) all-purpose flour
2 teaspoons baking powder
2 tablespoons cocoa powder (for one of the layers)
For the Poppy Seed Layer:
½ cup (70 g) poppy seeds
For the Jelly Layer:
1 cup (250 ml) fruit jelly (any flavor of your choice)
For the Cream Layer:
2 cups (500 ml) heavy whipping cream
4 tablespoons powdered sugar
1 teaspoon vanilla extract
For the Topping:
Grated dark chocolate or chocolate shavings
Directions:
Prepare the Cake Layers:
Preheat your oven to 180°C (350°F) and line a rectangular baking pan with parchment paper.
In a mixing bowl, whisk together eggs and sugar until light and fluffy. Gradually add vegetable oil and milk, mixing until smooth.
Divide the batter into two equal parts. Add cocoa powder to one half and mix well.
Pour the plain batter into one half of the pan and the cocoa batter into the other half. Bake for 20-25 minutes or until a toothpick comes out clean. Let cool.
Make the Poppy Seed Layer:
While the cake is baking, soak the poppy seeds in warm water for 15 minutes, then drain well.
Prepare the Cream Layer:
In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Assemble the Cake:
Slice the cake layers into rectangles. Spread a thin layer of fruit jelly over each piece.
Sprinkle the poppy seeds evenly over one of the layers.
Spread a generous layer of whipped cream over the poppy seed layer, then stack the remaining cake pieces on top.
Add the Topping:
Sprinkle grated chocolate over the top for a decorative finish.
Chill and Serve:
Refrigerate the assembled cake for at least 2 hours before serving to let the flavors meld.
