Ciasto Wuzetka: A Classic Polish Delight

Ciasto Wuzetka, also known as “W-Z cake,” is a beloved Polish dessert recognized for its rich chocolate flavor and creamy layers. This traditional treat is often associated with Warsaw, where it’s believed to have originated. The name “Wuzetka” is derived from the abbreviation “WZ,” which stands for a Warsaw-Zachodni (West) highway near which the dessert was popularized. Perfect for special occasions or a cozy evening at home, this cake is sure to impress with its delectable combination of sponge cake, whipped cream, and a glossy chocolate glaze.

Ingredients
For the Cake:
4 large eggs
1 cup granulated sugar
1 cup all-purpose flour
1/4 cup cocoa powder
1 teaspoon baking powder
1/4 cup vegetable oil
1/4 cup milk
For the Cream Filling:
2 cups heavy whipping cream
3 tablespoons powdered sugar
1 teaspoon vanilla extract
For the Chocolate Glaze:
100 g dark chocolate
1/4 cup unsalted butter
2 tablespoons milk
Optional Garnish:
Shredded chocolate or cocoa powder
Fresh fruit, like cherries or raspberries
Directions
Step 1: Prepare the Cake Batter
Preheat the oven to 180°C (350°F) and line a 9×13-inch baking pan with parchment paper.
In a mixing bowl, beat eggs and sugar together until light and fluffy.
Sift together flour, cocoa powder, and baking powder. Gradually fold the dry ingredients into the egg mixture.
Add milk and vegetable oil, mixing gently until just combined.
Pour the batter into the prepared pan and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely.
Step 2: Prepare the Whipped Cream Filling
In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Step 3: Assemble the Cake
Slice the cooled cake horizontally into two equal layers.
Spread the whipped cream evenly over the bottom layer and carefully place the top layer back on.
Step 4: Make the Chocolate Glaze
Melt the chocolate, butter, and milk in a heatproof bowl over a simmering pot of water (double boiler method). Stir until smooth and glossy.
Pour the glaze over the assembled cake, spreading evenly.
Step 5: Chill and Serve

Refrigerate the cake for at least 2 hours to set the layers. Slice into squares and serve chilled.

Serving and Storage Tips
Serving: Serve Wuzetka chilled for the best taste and texture. Pair it with a cup of coffee or tea for a classic Polish experience.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Avoid freezing, as it may affect the texture of the whipped cream.
Variations
Fruit Twist: Add a layer of fruit preserves, like cherry or raspberry, between the cake and whipped cream for a tangy contrast.
Coffee Flavor: Add a teaspoon of instant coffee to the cake batter for a mocha version of this classic dessert.
Lighter Option: Use Greek yogurt or mascarpone in place of whipped cream for a denser texture.
