Domowe Ptasie Mleczko, or “Homemade Bird’s Milk,” is a beloved Polish dessert that combines the lightness of fluffy marshmallow filling with a smooth, rich chocolate coating. Its delicate texture and sweet, creamy flavor make it a favorite for special occasions and a comforting treat to enjoy at home. This recipe brings the delightful candy into your kitchen, with a homemade touch that is sure to impress.
Ingredients:
For the filling:
2 cups heavy cream
1 cup powdered sugar
1 teaspoon vanilla extract
3 tablespoons gelatin
1/4 cup water
For the chocolate coating:
200g dark chocolate
50g milk chocolate
2 tablespoons butter
Directions:
Prepare the gelatin: In a small bowl, combine the gelatin with 1/4 cup of water. Allow it to bloom for 5-10 minutes until it absorbs the liquid.
Whip the cream: In a large bowl, beat the heavy cream with powdered sugar and vanilla extract until soft peaks form.
Melt the gelatin: Gently heat the bloomed gelatin in a microwave or on the stove until it’s completely dissolved. Make sure not to let it boil.
Combine gelatin and cream: Slowly pour the dissolved gelatin into the whipped cream mixture while continuing to whisk. This will help integrate the gelatin without breaking the whipped texture.
Chill the filling: Pour the marshmallow-like filling into a greased or lined baking dish. Smooth the surface with a spatula and refrigerate for at least 4 hours or until it sets.
Prepare the chocolate coating: While the filling is setting, melt the dark and milk chocolate together with the butter over a double boiler or in the microwave. Stir until the mixture is smooth and glossy.
Coat the filling: Once the filling is set, cut it into squares or rectangles. Dip each piece into the melted chocolate, ensuring it is fully coated. Place the chocolate-covered treats onto parchment paper to allow the coating to set.
Chill again: Return the coated Ptasie Mleczko to the refrigerator for another 30 minutes, or until the chocolate has fully hardened.
