These bite-sized delights are perfect for any occasion, whether you’re hosting a tea party or simply craving a sweet snack. Easy to make and utterly delicious, this recipe will quickly become a family favorite.
Ingredients
For the Cake Base:
2 cups (250g) all-purpose flour
1 cup (200g) granulated sugar
4 large eggs
1/2 cup (120ml) milk
1/2 cup (120ml) vegetable oil or melted butter
2 teaspoons baking powder
1 teaspoon vanilla extract
Pinch of salt
For the Coconut Coating:
2 cups (200g) desiccated coconut
1 cup (240ml) milk
1/2 cup (120g) unsalted butter
1 cup (150g) powdered sugar
2 tablespoons cocoa powder (optional, for a chocolate twist)
Directions
Prepare the Cake Base:
Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
In a large mixing bowl, whisk together the eggs and sugar until light and fluffy.
Add the milk, oil (or butter), and vanilla extract, mixing well.
Sift in the flour, baking powder, and salt. Gently fold the mixture until just combined.
Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool completely before cutting it into 2-inch cubes.
Prepare the Coconut Coating:
In a saucepan, combine the milk, butter, powdered sugar, and cocoa powder (if using). Heat over low-medium heat until the mixture is smooth and well combined. Let it cool slightly.
Coat the Cubes:
Dip each cake cube into the milk mixture, ensuring it’s well-coated but not soggy.
Roll the cubes in desiccated coconut, pressing gently to adhere.
Set and Serve:
Place the coated cubes on a wire rack or parchment paper to set for about 30 minutes.
Serving and Storage Tips
Serving: Serve kostki kokosowe with a hot cup of tea, coffee, or milk. Their soft texture and coconut flavor pair beautifully with warm beverages.
Storage: Store in an airtight container at room temperature for up to 3 days. For longer freshness, refrigerate for up to a week. Allow them to come to room temperature before serving.
Variations
Chocolate Coconut Cubes: Add a generous amount of cocoa powder to the cake batter for a chocolate-infused version.
Lemon Zest Twist: Incorporate a teaspoon of lemon zest into the batter for a citrusy flavor.
Almond Flakes: Mix almond flakes with the desiccated coconut for added crunch and flavor.
