Kutia Recipe: A Traditional Sweet Treat

Introduction: Kutia is a rich and hearty dish that holds deep cultural significance, particularly in Eastern European and Central Asian countries. This dish is often prepared for special occasions like Christmas, weddings, and other festive gatherings. It combines wheat berries with a sweet syrup made from honey, poppy seeds, and other ingredients to create a delightful and comforting dessert. It is not only a symbol of tradition but also a nourishing treat that has been passed down through generations.

Ingredients:

  • 1 cup wheat berries (or cracked wheat)
  • 2 tablespoons poppy seeds
  • 3 tablespoons honey
  • 1/4 cup dried fruits (raisins, cranberries, or dried apricots)
  • 1/4 cup chopped nuts (walnuts, almonds, or hazelnuts)
  • 1 tablespoon butter (optional)
  • 1/2 teaspoon vanilla extract
  • 2 cups water
  • Pinch of salt

Directions:

  1. Begin by rinsing the wheat berries thoroughly. Place them in a large pot and add the water and a pinch of salt. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 45 minutes, or until the wheat berries become tender and the water has been absorbed.
  2. While the wheat is cooking, toast the poppy seeds in a dry pan over low heat for 2-3 minutes until they start to release a fragrant aroma. Set aside.
  3. Once the wheat berries are cooked, remove them from the heat and let them cool slightly.
  4. In a separate bowl, combine the honey, vanilla extract, and butter (if using). Stir this mixture into the warm wheat berries.
  5. Add the toasted poppy seeds, dried fruits, and chopped nuts to the wheat mixture, and mix well.
  6. Taste and adjust sweetness, adding more honey if necessary.
  7. Allow the dish to rest for about 10 minutes before serving.
