Maniok – Góralski Przekładaniec

Introduction:
Maniok – Góralski Przekładaniec is a delicious and hearty dish inspired by traditional Polish mountain cuisine. Combining the rich flavors of manioc (cassava) with a savory blend of meat, vegetables, and spices, this dish is a comforting option for any meal. Often served as a filling main course, it showcases the rustic flavors that are characteristic of the mountainous regions of Poland, particularly the Tatra mountains. With its satisfying texture and savory taste, Maniok – Góralski Przekładaniec is perfect for family gatherings or cozy dinners.

Ingredients:

1 kg manioc (cassava), peeled and boiled
500 g ground pork or beef (or a mix of both)
1 large onion, finely chopped
2 cloves garlic, minced
2 tablespoons vegetable oil or butter
1 cup chopped mushrooms (optional)
1 teaspoon paprika
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
1 egg (optional, for binding)
1 cup grated cheese (optional, for topping)
2 cups chicken or vegetable broth
Directions:

Start by preparing the manioc. Peel the cassava and boil it in salted water until tender, about 20-25 minutes. Drain and mash until smooth, adding a bit of butter or milk to achieve a creamy consistency.
In a large pan, heat the oil or butter over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent.
Add the ground meat to the pan and cook until browned, breaking it apart with a spoon as it cooks.
Stir in the mushrooms (if using), paprika, thyme, salt, and pepper. Continue to cook for an additional 5-7 minutes until the mixture is well-combined and fragrant.
Once the meat mixture is ready, set it aside. In a large baking dish, spread a layer of the mashed manioc on the bottom.
Next, layer the meat mixture over the manioc, followed by another layer of mashed manioc.
If using, crack an egg into the mashed manioc and stir it in to help bind the layers together.
Top the final layer of manioc with grated cheese, if desired, and drizzle with chicken or vegetable broth for moisture.
Bake in a preheated oven at 180°C (350°F) for 25-30 minutes, or until the top is golden brown and the dish is heated through.
Remove from the oven and sprinkle with fresh parsley before serving.
