Mushroom Chicken Risotto: A Perfect Comfort Meal

Mushroom chicken risotto (Risotto pieczarkowe z kurczakiem) is a classic, creamy Italian-inspired dish that’s both hearty and flavorful. This meal combines tender chicken, earthy mushrooms, and creamy risotto to create a dish that feels like a warm hug in a bowl. Perfect for family dinners, it’s surprisingly easy to prepare while offering restaurant-quality results.

Ingredients:
For the Risotto:

1 cup Arborio rice
2 tablespoons olive oil or butter
1 medium onion, finely diced
2 garlic cloves, minced
1 cup white mushrooms, thinly sliced
4 cups chicken or vegetable stock, warmed
½ cup grated Parmesan cheese
2 tablespoons heavy cream (optional for extra creaminess)
Salt and pepper to taste
For the Chicken:

2 boneless, skinless chicken breasts, cubed
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
Garnish:

Fresh parsley, chopped
Additional Parmesan cheese
Directions:
Step 1: Cook the Chicken
Heat 1 tablespoon of olive oil in a skillet over medium heat.
Season the chicken cubes with paprika, garlic powder, salt, and pepper.
Add the chicken to the skillet and cook for 6–8 minutes until golden brown and fully cooked. Remove and set aside.
Step 2: Prepare the Risotto Base
In the same skillet, heat olive oil or butter. Add the onion and garlic, sautéing until fragrant and translucent.
Stir in the mushrooms and cook for 4–5 minutes until softened and slightly golden.
Step 3: Cook the Risotto
Add the Arborio rice to the skillet, stirring well to coat the grains with the oil or butter.
Gradually add the warm stock, one ladleful at a time, stirring continuously. Allow each addition to be absorbed before adding more.
Continue this process for about 18–20 minutes until the rice is tender and creamy.
Step 4: Combine and Serve
Stir in the cooked chicken, Parmesan cheese, and heavy cream (if using). Adjust seasoning with salt and pepper.
Garnish with parsley and extra Parmesan cheese before serving.

Serving: Serve immediately for the best texture and flavor. Pair it with a side salad or crusty bread for a complete meal.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of stock or water to restore creaminess.
