  • 1 tablespoon of Dijon mustard

  • 1 tablespoon of lemon juice
  • 1/2 cup of white wine or vegetable broth (optional for extra depth of flavor)

Directions:

  1. Prepare the Fish: Preheat your oven to 180°C (350°F). Season the fish fillets with salt, pepper, and a squeeze of lemon juice. Place them in a greased baking dish.
  2. Prepare the Leeks: In a large skillet, heat the olive oil or butter over medium heat. Add the sliced leeks and sauté until they soften, about 5-7 minutes. Stir occasionally to avoid burning. Add salt, pepper, and Dijon mustard. Continue cooking for another 2 minutes.
