Śledzie w porach, a traditional Polish dish, is a flavorful and hearty recipe that combines the rich taste of salted herring with the delicate sweetness of leeks. This dish is a staple in many Polish households, especially during festive occasions like Christmas or Easter. The savory herring pairs beautifully with the soft, aromatic leeks, creating a perfect balance of flavors. Ingredients:

4 salted herring fillets (soaked in water for a few hours to reduce saltiness)
2 large leeks, washed and sliced into thin rings
1 medium onion, finely chopped
2 tablespoons of vegetable oil
1 tablespoon of white wine vinegar
1 tablespoon of sugar
Salt and pepper to taste
Fresh parsley (for garnish)
Directions:

Begin by soaking the salted herring fillets in cold water for at least 2-3 hours to remove excess salt. Once soaked, drain and cut the herring into bite-sized pieces.
In a large skillet, heat the vegetable oil over medium heat. Add the chopped onions and cook for 2-3 minutes, until they become soft and translucent.
Add the sliced leeks to the pan and continue cooking for another 5 minutes, stirring occasionally. The leeks should soften and become fragrant.
In a small bowl, combine the white wine vinegar and sugar, stirring until the sugar dissolves. Pour this mixture into the skillet with the leeks and onions. Season with salt and pepper to taste, and stir everything together.
Gently add the herring pieces to the skillet, making sure they are well-coated with the leek and onion mixture. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
Remove from heat and allow the dish to cool for a few minutes before serving.
