Szarlotka Klasyczna: A Traditional Polish Apple Pie

Szarlotka, a beloved dessert in Polish cuisine, is the epitome of comfort food. This classic apple pie, with its buttery crust and spiced apple filling, is perfect for any occasion, from cozy family gatherings to festive celebrations. Its simplicity and rich flavors make it a timeless favorite. Let’s dive into this traditional recipe and learn how to create your own delicious Szarlotka at home.

Ingredients:
For the crust:
2 ½ cups (320 g) all-purpose flour
1 cup (200 g) unsalted butter, chilled and cubed
½ cup (100 g) granulated sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking powder
For the filling:
6 medium apples (preferably tart varieties like Granny Smith)
½ cup (100 g) granulated sugar (adjust based on apple sweetness)
1 teaspoon ground cinnamon
1 tablespoon lemon juice
2 tablespoons cornstarch
Optional: powdered sugar for dusting
Directions:
Prepare the crust:

In a large bowl, mix the flour, sugar, and baking powder.
Add the chilled butter and use your fingertips or a pastry cutter to create a crumbly mixture.
Add the egg and vanilla extract, kneading gently until the dough forms. Divide into two equal parts, wrap in plastic, and refrigerate for 30 minutes.
Make the filling:

Peel, core, and slice the apples thinly.
Toss the slices with sugar, cinnamon, lemon juice, and cornstarch in a large bowl. Set aside to release juices.
Assemble the Szarlotka:

Preheat the oven to 180°C (350°F) and grease a 9-inch round or square baking pan.
Roll out one portion of dough and press it into the bottom of the pan.
Spread the apple filling evenly over the crust.
Roll out the second dough portion and lay it on top, sealing the edges. Poke a few holes with a fork to let steam escape.
Bake:

Place the Szarlotka in the oven and bake for 45–50 minutes, or until the top is golden brown.
Allow it to cool slightly before dusting with powdered sugar, if desired.
Serving and Storage Tips:
Serve Szarlotka warm or at room temperature, accompanied by a scoop of vanilla ice cream or a dollop of whipped cream.
Store leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days. Reheat slices in the oven for a freshly baked taste.
Variations:
Nutty Twist: Add a handful of chopped walnuts or almonds to the apple filling for extra texture.
Oat Topping: Instead of a full top crust, sprinkle a crumble made of oats, butter, and sugar for a rustic touch.
