Ciasto Biała Dama, or “White Lady Cake,” is a popular no-bake dessert in Poland that combines light, creamy layers with a sweet and tangy twist. This no-bake cake is perfect for those who crave a delicious, yet simple treat that doesn’t require the oven. Ingredients:

400 g of digestive biscuits (or graham crackers)
500 ml of heavy cream
250 g of mascarpone cheese
200 g of powdered sugar
1 teaspoon of vanilla extract
100 ml of lemon juice
1 tablespoon of gelatin
50 ml of water
Fresh fruit (e.g., strawberries or blueberries) for topping (optional)
Directions:

Prepare the base:

Begin by crushing the digestive biscuits into small crumbs. You can do this by placing them in a ziplock bag and gently crushing them with a rolling pin, or by using a food processor.
Make the creamy filling:

In a large bowl, whip the heavy cream until it forms stiff peaks.
In another bowl, mix the mascarpone cheese with powdered sugar and vanilla extract. Blend them together until smooth.
Add lemon flavor:

In a small bowl, dissolve the gelatin in warm water and let it cool to room temperature.
Slowly add the lemon juice to the mascarpone mixture, followed by the dissolved gelatin. Stir everything until well combined.
Combine and assemble:

Gently fold the whipped cream into the mascarpone-lemon mixture, being careful not to deflate the whipped cream.
In a rectangular or square dish, spread a thin layer of crushed biscuits at the bottom.
Pour half of the creamy filling over the biscuits and smooth it out. Repeat with another layer of biscuits, followed by the remaining cream mixture.
Finish by spreading the final layer of biscuits on top.
Chill:

Place the dish in the refrigerator and let the cake set for at least 4 hours, or preferably overnight. This will help the flavors meld and the cake firm up.
Serving and Storage Tips:

Serving: Cut the Ciasto Biała Dama into squares or slices and serve chilled. Garnish with fresh fruit such as strawberries, raspberries, or blueberries to add a pop of color and extra flavor.
Storage: Keep the cake refrigerated in an airtight container for up to 3 days. The longer it sets, the better the flavors meld together.
