Domowy makowiec zawijany, or homemade Polish poppy seed roll, is a cherished treat often gracing tables during Christmas, Easter, and other special occasions in Poland. This traditional dessert features a soft yeast dough rolled around a sweet and aromatic poppy seed filling, creating a beautiful spiral pattern. Ingredients:
For the Dough:

500g (4 cups) all-purpose flour
50g (¼ cup) sugar
7g (1 packet) dry yeast
250ml (1 cup) warm milk
100g (½ cup) unsalted butter, melted
2 large eggs
½ teaspoon salt
For the Poppy Seed Filling:

200g (1 cup) poppy seeds
100ml (½ cup) milk
50g (¼ cup) sugar
50g (⅓ cup) raisins (optional)
30g (2 tablespoons) butter
1 tablespoon honey
1 teaspoon vanilla extract
Zest of one lemon
For Glaze (Optional):

100g (¾ cup) powdered sugar
2–3 tablespoons lemon juice
Directions:
Step 1: Prepare the Filling

Rinse the poppy seeds in warm water, then boil them in milk for about 10–15 minutes until tender. Drain and cool.
Grind the poppy seeds using a food processor or grinder for a smoother texture.
In a pan, melt butter, then mix in sugar, honey, vanilla extract, and lemon zest. Add the ground poppy seeds and cook until well combined. Stir in raisins if desired. Set aside to cool.
Step 2: Make the Dough

In a bowl, dissolve the yeast in warm milk with a teaspoon of sugar. Let it sit for 10 minutes until foamy.
In a large mixing bowl, combine flour, sugar, and salt. Add the yeast mixture, melted butter, and eggs. Knead the dough until smooth and elastic, about 10 minutes.
Cover the dough with a clean cloth and let it rise in a warm place for about 1–2 hours, or until it doubles in size.
Step 3: Assemble the Makowiec

Roll out the dough into a rectangular shape about ½ cm thick. Spread the poppy seed filling evenly over the dough.
Carefully roll the dough into a tight log. Place the roll on a baking sheet lined with parchment paper, seam-side down.
Cover and let it rise for another 30–40 minutes.
Step 4: Bake the Roll

Preheat your oven to 180°C (350°F).
Bake the makowiec for 35–40 minutes or until golden brown. Let it cool completely before glazing.
Step 5: Add the Glaze (Optional)

Mix powdered sugar with lemon juice to form a smooth glaze. Drizzle over the cooled roll for a finishing touch.
Serving and Storage Tips:
Serve slices of makowiec with a cup of tea or coffee for a delightful dessert or snack.
Store leftovers in an airtight container at room temperature for up to 3 days. For longer storage, wrap tightly in plastic wrap and freeze for up to 2 months.
