Polish Fish Balls in Vinegar Marinade)
Introduction
Kulki Rybne w Zalewie Octowej is a traditional Polish dish that highlights the country’s love for pickled and marinated foods. These fish balls, preserved in a tangy vinegar solution, are a delightful combination of flavors and textures. Perfect as an appetizer or a snack, this dish pairs wonderfully with fresh bread or as a side to a hearty meal. Its long shelf life makes it a favorite for preparing in advance for festive occasions or as a treat to enjoy over the week.
Ingredients:
For the Fish Balls:
500g white fish fillets (cod, haddock, or pollock), finely minced
1 small onion, finely chopped
2 tablespoons breadcrumbs
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon fresh dill, chopped (optional)
1 tablespoon vegetable oil (for frying)
For the Vinegar Marinade:
500ml water
250ml white vinegar
2 tablespoons sugar
1 teaspoon salt
5 whole peppercorns
3 bay leaves
1 carrot, sliced into thin rounds
1 medium onion, sliced into rings
Directions:
Prepare the Fish Balls:
In a mixing bowl, combine minced fish, chopped onion, breadcrumbs, egg, salt, pepper, and dill. Mix thoroughly until the mixture holds together.
Form small balls (about 2-3 cm in diameter) with your hands.
Heat oil in a pan over medium heat. Fry the fish balls until golden brown on all sides. Remove and set aside on a paper towel to drain excess oil.
Make the Marinade:
In a pot, combine water, vinegar, sugar, and salt. Add peppercorns, bay leaves, carrot slices, and onion rings. Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes.
Combine:
Place the fried fish balls in a clean glass jar or container. Pour the warm marinade over them, ensuring they are fully submerged.
Let the mixture cool to room temperature before sealing the jar. Refrigerate for at least 24 hours to allow the flavors to meld.
Serving and Storage Tips:
Serve chilled or at room temperature with fresh bread or crackers.
Store in the refrigerator for up to a week. Ensure the fish balls remain submerged in the marinade for optimal freshness.
Variations:
Spicy Version: Add a few slices of chili or a teaspoon of chili flakes to the marinade for a spicy kick.
Herb-Infused: Replace dill with parsley or thyme for a different herbal note.
Smoked Fish Balls: Use smoked fish for a deeper, smoky flavor.
