Ingredients:

4 boneless, skinless chicken breasts
1/2 cup sun-dried tomatoes, chopped
1 tablespoon olive oil
3 cloves garlic, minced
1 small onion, finely chopped
1/2 cup chicken broth
1/2 cup heavy cream
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Fresh basil or parsley for garnish
Directions:

Prepare the Chicken: Season the chicken breasts with salt, pepper, and dried oregano. Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

Make the Sauce: In the same skillet, add the chopped onion and garlic, sautéing until soft and fragrant, about 3 minutes. Add the sun-dried tomatoes and cook for another 2 minutes.

Deglaze and Simmer: Pour in the chicken broth and bring the mixture to a simmer. Allow it to reduce slightly, about 5 minutes. Stir in the heavy cream, dried basil, and additional salt and pepper to taste. Let the sauce simmer for another 3-4 minutes until thickened.

Combine Chicken and Sauce: Return the chicken breasts to the skillet and spoon the sauce over them. Let everything simmer together for an additional 5 minutes to allow the flavors to meld and the chicken to absorb the sauce.

Serve: Garnish with fresh basil or parsley before serving.
