Ryż po katalońsku, or Catalan-style rice, is a delightful and flavorful dish that brings together the rich culinary traditions of Spain. Directions:

Prepare the saffron: If using saffron, soak the threads in a small bowl of warm water for about 10 minutes to release the color and flavor.
Sauté the vegetables: In a large skillet or pan, heat olive oil over medium heat. Add the onion and garlic, cooking until softened and fragrant, about 3-4 minutes.
Add peppers and tomato: Stir in the bell peppers and diced tomato, cooking for another 5 minutes until the vegetables begin to soften.
Season: Sprinkle in the paprika and add salt and pepper to taste. Stir well to combine the flavors.
Cook the rice: Add the rice to the pan, stirring to coat it with the vegetable mixture. Let the rice cook for 2-3 minutes, allowing it to absorb the flavors.
Add liquid and saffron: Pour in the broth, followed by the saffron water (if using). Stir everything together, then cover the pan and simmer over low heat for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
Add peas: About 5 minutes before the rice is done, add the peas and stir them in. Cover and let the rice finish cooking.
Serve: Once the rice is tender and fluffy, remove it from the heat and let it sit for a few minutes before serving.
