Sernik Królewski, often referred to as Royal Cheesecake, is a decadent Polish dessert that combines a rich cheese filling with a delicate cocoa crust. Ingredients
For the Cocoa Crust:
2 ½ cups all-purpose flour
1 cup unsalted butter, cold and diced
½ cup powdered sugar
4 tablespoons cocoa powder
1 teaspoon baking powder
2 large egg yolks
For the Cheese Filling:
1 kg (2.2 lbs) twaróg or full-fat farmer’s cheese, finely ground
1 ½ cups granulated sugar
4 large eggs, separated
½ cup unsalted butter, softened
1 teaspoon vanilla extract
Zest of one lemon
2 tablespoons cornstarch or potato starch
Directions
Prepare the Cocoa Crust:
In a large bowl, sift together flour, powdered sugar, cocoa powder, and baking powder.
Add diced butter and rub it into the dry ingredients until the mixture resembles fine crumbs.
Mix in the egg yolks and knead into a smooth dough. Divide the dough into two portions, one slightly larger than the other. Wrap both in plastic wrap and refrigerate for at least an hour.
Make the Cheese Filling:
Beat the egg yolks with sugar until light and creamy.
Gradually add the butter, followed by the vanilla extract and lemon zest.
Stir in the twaróg and cornstarch, mixing until smooth.
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold them into the cheese mixture to create a fluffy texture.
Assemble the Cheesecake:
Preheat the oven to 180°C (350°F).
Grate the larger portion of the dough and press it evenly into the bottom of a greased or parchment-lined 9×13-inch baking pan.
Pour the cheese filling over the crust and spread it evenly.
Grate the remaining dough and sprinkle it over the top of the filling.
Bake:
Place the pan in the oven and bake for 50–60 minutes, or until the top is golden and set.
Allow the cheesecake to cool completely before serving.
Serving and Storage Tips
Serve Sernik Królewski chilled or at room temperature with a dusting of powdered sugar or a drizzle of chocolate sauce.
Store in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze individual slices for up to 3 months.
