Sernik Piernikowy (Gingerbread Cheesecake)

Sernik Piernikowy, or Gingerbread Cheesecake, is a festive Polish dessert that combines the rich creaminess of traditional cheesecake with the warm, spiced flavors of gingerbread. This dessert is perfect for the holiday season, offering a comforting and aromatic treat that stands out on any table. Its unique blend of spices, creamy texture, and crunchy gingerbread crust will leave your guests asking for seconds.

Ingredients:
For the crust:

200g (7 oz) gingerbread cookies, finely crushed
80g (5 tbsp) unsalted butter, melted
For the filling:

500g (18 oz) cream cheese, room temperature
200g (1 cup) granulated sugar
3 large eggs
200ml (1 cup) sour cream
1 tsp vanilla extract
1 tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground nutmeg
For the topping (optional):

200ml (1 cup) heavy cream, whipped
Grated chocolate or gingerbread cookie crumbs for garnish
Directions:
Prepare the crust:

Preheat your oven to 160°C (320°F).
In a bowl, mix the crushed gingerbread cookies with melted butter until evenly coated.
Press the mixture into the bottom of a springform pan to form an even crust. Refrigerate while preparing the filling.
Make the filling:

In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
Add the eggs, one at a time, mixing well after each addition.
Stir in the sour cream, vanilla extract, cinnamon, ginger, and nutmeg until fully incorporated.
Assemble and bake:

Pour the filling over the prepared crust and smooth the top with a spatula.
Place the pan in a water bath to prevent cracks and bake for 60-70 minutes, or until the center is slightly jiggly but the edges are set.
Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour before transferring it to the refrigerator.
Chill and garnish:

Refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow the flavors to meld.
Before serving, top with whipped cream and sprinkle with grated chocolate or cookie crumbs if desired.
Serving and Storage Tips:
Serve chilled for the best texture and flavor.
Store leftovers in an airtight container in the refrigerator for up to 5 days.
For longer storage, wrap individual slices in plastic wrap and freeze for up to 3 months. Thaw overnight in the fridge before serving.
Variations:
Chocolate Twist: Add 100g (3.5 oz) melted dark chocolate to the filling for a richer flavor.
Nutty Delight: Mix crushed nuts, like hazelnuts or almonds, into the crust for added texture.
Citrus Zing: Incorporate orange zest into the filling for a fresh and zesty touch.
