Ingredients
500 g (1 lb) salted herring fillets, soaked in water or milk for 4-6 hours
1 medium onion, finely sliced
2 cloves garlic, minced
3 medium tomatoes, diced (or 200 g canned diced tomatoes)
100 g black olives, pitted and halved
3 tbsp olive oil
2 tbsp capers, rinsed
1 tbsp white wine vinegar
1 tsp dried herbes de Provence (or a mix of thyme, rosemary, oregano, and basil)
Fresh parsley, chopped (for garnish)
Salt and pepper to taste
Directions
Prepare the Herring
Rinse the soaked herring fillets and pat them dry. Cut them into bite-sized pieces and set aside.
Cook the Sauce
Heat olive oil in a pan over medium heat. Add the minced garlic and sliced onion, cooking until soft and fragrant.
Stir in the diced tomatoes and cook for 5 minutes, allowing the sauce to thicken slightly.
Add the Mediterranean Touch
Mix in the olives, capers, and herbes de Provence. Season with a pinch of salt and pepper, keeping in mind that the capers and olives are already salty.
Combine
Remove the sauce from the heat and let it cool slightly. Layer the herring pieces in a serving dish and pour the sauce over them.

Cover the dish and refrigerate for at least 2-4 hours, allowing the flavors to meld. For the best taste, marinate overnight.
Serve
