Ingredients

2 ½ cups (300 g) all-purpose flour
1 cup (200 g) unsalted butter, chilled and cubed
½ cup (100 g) granulated sugar
2 egg yolks
1 teaspoon baking powder
A pinch of salt
For the Filling:
6–8 medium apples (Granny Smith or any tart variety), peeled and sliced
½ cup (100 g) sugar (adjust to taste)
2 teaspoons cinnamon
1 tablespoon lemon juice
1 tablespoon cornstarch
For the Crumble (Optional):
1 cup (120 g) all-purpose flour
½ cup (100 g) sugar
½ cup (100 g) butter, melted
Directions
Prepare the Dough:
In a large bowl, combine flour, sugar, baking powder, and salt.
Add chilled butter and mix with your hands or a pastry cutter until the mixture resembles coarse crumbs.
Add egg yolks and knead lightly to form a smooth dough. Divide the dough into two portions (2/3 and 1/3). Wrap in plastic and refrigerate for at least 30 minutes.
